Cedar Ridge, Cedar Ridge, Cedar Ridge.... my goodness.  I absolutely love people who choose to step outside of the box and try to be different, and less ordinary.  I read on your website that you took the rye whiskey a step further to avoid the ordinary.  Today we are going to talk about your MALTED Rye Whiskey.  51% Malted Rye, 34% Rye, 12% Corn, & 3% Malted Barley.

Malted Rye, that is quite a taste.  I found it interesting that even on the nose my senses were changing as I let it sit in my glass just to see how it would mellow out.  I will tell you that when I first nosed the whiskey it was a little spicy, almost peppery in flavor.  With letting it sit for a little bit I got it to open up.   When I say open up I was able to smell some sweetness to the whiskey.  Almost a cross between honey and a corn syrup.  I was surprised that I got this sweetness on the nose with a low corn content.

The taste was one that changes in your mouth as you slowly take your first couple of sips.  My first sip started a little peppery and lingered on the lips.  The second sip sweetens out and pepper flavor becomes mild.  Trying to figure out what the sweetness is I get reminded of a roasted marshmallow (one of my favorite treats).  When I tried to hone in on the pepper flavor I kept getting referred back to an Anaheim green chili pepper that has been roasted by one of the food vendors at a park n swap. Nothing like a sweet peppery flavor to get your soul warmed and toasty on a chilly day.
