Down slope Double Diamond Whiskey

Down Slope Distilling is a local Colorado distillery, which can be found in Centennial, Colorado.  They currently make 10 spirits and can be found in 7 states.  I recently did a tasting on the Double Diamond Whiskey.  The whiskey is made with 65% Maris Otter Floor Malted Barley and 35% Rye.  It is 80 proof, 40% alcohol.  On the nose I got a sense of fruit, maybe apricot, some charred oak and a sweet tart.  For the taste I got a mild pepper to warm you on a cold day.  A bit of olive oil, caramel and a mushroom earthly flavor to bring out the peat.  Definitely a sipping whiskey for sure.  Looking forward to attending their distillery school.  Check it out at http://www.downslopedistilling.com/distillery-school/
