Yellow Spot - 12 Year Single Pot Still Whiskey

Interesting story behind the Spots.  Red, Yellow, Green and Blue all have their own meanings.  While the whiskey was sitting in a bonded warehouse they would be color coded to indicate their age.  Red = 15 year, Yellow = 12 year, Green = 10 year and Blue = 7 years. and each production of the spots is a limited release . 

Yellow spot sits in a bourbon barrel and sherry butt for 12 years and then finished in Ma1aga Casks to balance out the spices that are created with the Pot Still.  Since Yellow Spot has been produced it is likely that we can see Red Spot may be surfacing sometime in the future..
 
The Nose for Yellow Spot was a cross between a mild white pepper and oak.  The taste is surprising and reminds me of sucking on a honey stick as a kid, simple and sweet.  This honey flavor continues to coat the back of my throat with a very smooth finish.  I really enjoyed this whiskey neat and no ice needed.  But you know me, I am not one to put ice in my whiskey.  Cheers!
