Aged: Barrel aged at least 1 month

On the Nose: Vanilla and oak are strong on the nose with a very earthy scent. Almost similar to a garden. Strong leafy vegetables, tomatoes and peppers.
Taste: Mild tobacco and Anaheim pepper flavor. The oak is present but the pepper is more pronounced and hits the tongue right away. The sweet flavor lands about half way through the tasting. I am wondering with more barrel time if it would produce more of a sweetness from the corn. Not bad for a young bourbon at all, and great with sweeter cocktails.
Please note: My taste of tobacco may be different than others. I think of the leafy plant not an ash tray. The leafy plant makes it more pleasurable to taste.
