Distillery 291 – Single Barrel Colorado Bourbon Whiskey
Aged: Less than 2 years
100 proof 50% alcohol
Barrel # 157
A Colorado Bourbon that has an Aspen Stave Finish that in my opinion is very pronounced.
On the Nose:  A very woody scent with traces of caramel
Taste:  You can taste the wood in the whiskey.  Oak from the barrel is there but the Aspen staves come through with a very earthy tone.  Corn provides the sweetness and it has a medium pepper finish.  It is crazy but this particular bourbon makes me think of a “cowboy style whiskey”.  Rugged and tough comes to mind, a western whiskey that is appreciated after a long day of herding cattle.  My vision: A cowboy in his favorite chair on the porch, boots on the railing, hat tipped down over the eyes, whiskey in hand and the bottle by the base of the chair.  Who would have thought, all of that could come from a whiskey tasting.  Tipping my hat to you, 291.  Cheers!
