Spirit Hound Distillers Cask Strength Whisky

On the nose:  This cask strength, single malt whisky has a floral scent.  A cross between flower petals and honey almond.  A mild wood scent rounds it out, but the more you nose, the more you will get the floral piece.
Taste:  Spirit Hound Distillers bottles their whisky by the barrel.  During the time that I met Craig he was sharing samples of Barrel 38 and I had to go back for more.  Now some may think that barrel strength is too strong (since it is marked at 124.8 proof), but it provides great characteristics that makes you want to continue to sip the whisky until the last drop is gone from your glass, or refill it, your choice.
This particular barrel has a heavy tobacco/peat/smoke flavor with a powerful pepper finish.  The flavors follow all the way through the tasting similar to a scotch.   The pepper is a nice compliment for the earth tones and a slight cocoa powder.  Had to throw the chocolate in there.
Spirit Hound is definitely a distillery that you will want to visit in Lyons, CO.  You can try multiple barrels of whiskey and other spirits that they have available.  I have got the point where I can pick out which barrels have Craig’s flavor profile written all over it (more of the scotch style whisky).

This is Jun 2012 so 2018 comments might be out of date. The latest batch of Spirit Hound Rye was released in 2021 and it is very nice, 4 years old. I bought both the regular bottle and was lucky to get a cask strength bottle. This is very good craft whiskey and getting better. Flights at the bar will give you the rye (if any is left) and three barrels of the bourbon to compare.
