Marble Distillery and Inn is located in Carbondale, CO. A unique craft distillery that is the first in the world to be a zero waste facility. They have fabulous spirits that are filtered through marble and coconut husks to give their spirits a true smooth and unique flavor.

Rye whiskey pulled from the barrel and is now bottled. 14 to be exact. I did have it bottled at 100 proof so that individuals can add an ice cube if they like. Great characteristics from this barrel produced a smoky flavor to the whiskey. The rye hits in the middle of the palate and finishes nicely. Since all good barrels have a second use mine was definitely put to the test. I added Marble Distillery's Gingercello to the barrel to create a rye gingercello reserve. So far we are one month in and the taste is absolutely delicious. Three more months to go and it will be ready just in time for this summer's party were participants will be able to taste it and the rye whiskey. Cheers. |

Barrel Time: one year
Tasting notes for this visit were spot on. Most know that I have a fascination with rye whiskeys. The smokiness and the bite of the rye and how after time it settles down and still has a presence that makes it known.
For my spirit I was pleasantly surprised on where the rye was hitting. In my personal opinion a rye whiskey should not be in your face and spicy at the front of the mouth. It should be smooth in the beginning, and more pronounced in the middle to the back of the mouth feel. This rye is perfect in that sense. We will be bottling this spirit at 100 proof so that people can enjoy this rye the way I like it and proof it down further to their liking if they choose to.

Time Rye Whiskey has been in the barrel: 6 months Due to weather conditions this was the first time I could visit Carbondale and the One Woman's Perspective Barrel that is resting nicely at Marble Distillery and Inn. Am I disappointed, and did I miss my mark for pulling the barrel? Absolutely not! At the six month mark I was pleasantly surprised. As most of us know every barrel/cask has a uniqueness that it adds to a whiskey's flavor profile. This barrel is amazing and I am so glad that it was chosen for my project. The nose has an amazing smokiness to the aroma. The taste is mildly smokey with a nice sharp rye flavor. There are underlying tones of caramels and vanillas that are peaking my interests to see where it will be in the next 6 months. I can hardly wait! If you are interested in signing up for a whiskey barrel project, to do whiskey your way, I highly recommend working with Marble Distillery. Cheers! |

The 10L (3 gallon) barrel is filled with a rye whiskey that was produced by Marble Distillery. Their rye is barreled at 120 proof, with the combination of the following ingredients: 40% Rye/40% Wheat/20% Malted Barley. The barrel has a #3 char and is at an elevation of 6,000+ feet in a glass locker that is climate controlled. Due to the size of the barrel I will start tasting it at 3 months to see how much it has changed since inception. Can't wait!
